We are all familiar with the saying “don’t cry over spilt milk,” but what about spoiled milk? Discovering that your milk has gone bad can be quite frustrating. However, with a bit of understanding and a few adjustments, you can prolong the freshness of your milk significantly.

The key reason behind milk going bad is the rapid multiplication of bacteria present in the milk. This process leads to the conversion of lactose into lactic acid, resulting in a sour taste and a lumpy texture due to clumped proteins. While it’s inevitable for milk to eventually spoil, there are ways to slow down this process.

To prevent introducing new bacteria, avoid drinking directly from the milk container. Keeping your milk well-chilled is crucial, as bacteria grow more rapidly above 4°C. The longevity of your milk depends on the type of milk and how you handle it.

Different types of milk, including cow’s milk, ultra-filtered milk, UHT milk, and non-dairy alternatives, have varying shelf lives. Pasteurised milk, for example, undergoes a heating process to remove harmful bacteria, extending its shelf life to around 10 days unopened and three to seven days once opened.

Plant-based alternatives like oat milk can last 7-14 days unopened in the refrigerator, while UHT oat milk can last months unopened. Filtered milk undergoes extra filtration to reduce microbes, resulting in a longer shelf life of seven days after opening and 21 days unopened.

UHT milk, heated to a high temperature for a short time, has the longest shelf life among milk types, lasting up to nine months unopened. Proper storage is crucial, with the ideal fridge temperature being around 2-3°C. Store milk towards the back of the fridge for optimal cooling, avoiding the warmer fridge door.

Filtered milk, such as Arla Cravendale, undergoes a specialized filtration process and is packaged in opaque bottles to protect it from light, enhancing its freshness. Despite “use by” or “best before” dates on milk bottles, it’s essential to check for signs of spoilage like an off smell, lumpy texture, or curdling when mixed with hot water.

By following these guidelines and conducting simple freshness tests, you can ensure your milk stays fresh longer.
