“Jamaican Chef Brings Scottish Flavors to Kingston”

A taste of Scotland has made its way to Jamaica, thanks to a culinary course attended by Tanisha Higgins. After spending six weeks in Ayrshire learning cooking skills at Dumfries House through the King’s Foundation, she has brought Scottish cuisine to downtown Kingston, serving dishes like potato scones at her cafe.

Having graduated from the programme sponsored by The Rose Town Foundation in Kingston, Tanisha now incorporates her newfound knowledge of food origins and culinary techniques into her cooking. Her restaurant features a variety of Scottish dishes, including potato scones, reflecting her experience in Scotland.

Tanisha’s time in Scotland exposed her to new foods, gardening practices, and food production methods. The experience also enhanced her knife skills and barista expertise, which she now shares with others in Jamaica.

Recently, Tanisha returned to Scotland to officially complete her culinary course at Dumfries House, where she had the chance to meet the King, a prominent supporter of the UK’s hospitality industry. The course, inspired by the King’s vision, focuses on both back-of-house and front-of-house hospitality skills.

The King’s Foundation, headquartered at Dumfries House, plays a significant role in preserving historic royal sites and promoting education and cultural initiatives in various locations, including London. The foundation’s work spans educational programs, health initiatives, and community regeneration projects, benefiting thousands of individuals annually.
