Shianna Smart, the co-owner of Trails End Buffalo Stix located in Gull Lake, southwestern Saskatchewan, initially doubted the authenticity of an email purportedly from NASA. However, after engaging in discussions and receiving further details, she found it to be a thrilling opportunity. Canadian astronaut Joshua Kutryk selected bison jerky from her brand to accompany him on the upcoming NASA-SpaceX mission to the International Space Station, scheduled for October 1 pending final approval.
This isn’t the first time that Saskatchewan bison jerky has made its way to space. In 2013, Canadian astronaut Chris Hadfield enjoyed the bison jerky sticks during his time in orbit under the previous ownership of the business. Smart expressed surprise and excitement at being chosen again for this unique opportunity.
The selection process for the space-bound jerky involved rigorous scrutiny by both the Canadian Space Agency (CSA) and NASA before it was given the green light to venture beyond the stratosphere. Smart hopes that the jerky’s journey to space will highlight its suitability for various occasions, such as kids’ lunches, sports activities, and travel.
According to Natalie Hirsch, overseeing operational space medicine at the Canadian Space Agency, astronauts have the freedom to personalize a portion of their food supplies, with NASA providing the majority and the CSA offering Canadian options. Specific criteria for space-bound food include an 18-month shelf life, space-friendly packaging, and minimal crumbs to ensure a smooth experience in zero gravity.
Nolan Langer, assistant plant manager at the Saskatchewan Food Industry Development Centre in Saskatoon, emphasized the importance of local support for small businesses like Trails End Buffalo Stix. The facility has been producing jerky for almost two decades, serving as a vital resource for small clients in western Canada.
Apart from bison jerky, Canadian products heading to space encompass a variety of items such as maple syrup from Ontario and Quebec, and salmon from the west coast. This initiative showcases the diversity and quality of Canadian goods that can meet the rigorous standards for space travel.
